And the best part is how easy it is to make shredded chicken for your meals when you have an Instant Pot. You can, of course, use store-bought chicken or make it another way, but I love just tossing a couple or frozen chicken breasts into the Instant Pot with salt, pepper, and a cup of water and cooking on manual for 30 minutes. They come out ready to shred every single time.

How To Make Keto Jalapeño Popper Chicken Casserole
Now, onto your creamy keto chicken casserole recipe...are you ready? It's sooo good.
First you'll get your oven pre-heating while you put your casserole together.
In a large bowl, combine your cooked and shredded chicken, cream cheese, sour cream, mayonnaise, part of your jalapeños, and the spices.
Using the paddle attachment on your mixer (or some muscle and a good spoon), mix it all together. Spread it out in a 9x13 pan (no need to grease it).
Once it's evenly distributed in your casserole dish, sprinkle on the shredded cheddar and bacon pieces. You'll bake the casserole for 30-35 minutes and, if you want to brown it a bit more, can broil it at the end. Garnish with the remaining jalapeño slices.
Adjusting The Spiciness Of Your Casserole
Most of the heat in a jalapeño is in the seeds, so to turn the heat down on this dish just remove the seeds when you slice your jalapeño.
If you want more heat, you can add some extra jalapeños or just leave the seeds in. Also, you can add the garnish before broiling to kick it up a notch.
The smoother, greener the pepper is, the less heat it has. If you notice a lot of lines, the pepper plant has undergone stress and your jalapeño will be spicier (source). So check your peppers carefully and choose the one best suited to your preferred tastes!

Ingredients
- 3 Cups Shredded Cooked Chicken Breast
- ½ Cup (or more, if desired) Chopped Jalapeños
- 8 oz. Cream Cheese, Softened
- ½ Cup Mayonnaise
- 2 Teaspoons Garlic Powder
- 2 Teaspoons Onion Powder
- 1 Cup Shredded Cheddar Cheese
- Additional ½ Cup Sliced Jalapeños
- ½ Cup Real Bacon Pieces
Instructions
- Preheat oven to 350.
- In a large mixing bowl, combine all ingredients except shredded cheese, bacon and additional sliced jalapeños.
- Pour mixture into a 9x13 pan and top with 1 cup shredded cheese and bacon pieces.
- Bake for 30-35 minutes, or until cheese just starts to brown. (I broiled mine for a couple minutes at the end.)

This recipe is outstanding! I tried it a year ago and thought it was worth keeping, but then it got buried in a stack of other recipes that I also like. Finally tried it again last night. It's five-star! I like to add one or two cups of small-diced, steamed or microwaved cauliflower to the mix to make it slightly less dense. It won't get buried again!
