Keto No Bake Cookies are a quick and easy way to make a keto dessert without turning the oven on. Shredded coconut, peanut butter, and cocoa collide in one addictive little bite-size cookie.

Keto No Bake Cookies

So why make these no bake cookies? Do you ever just crave sweet? I know I do and having a quick and easy recipe you can whip up, helps me to stay on track.

You are less tempted to stray from your dietary diet if you have easy recipes that come together in no time. Plus, these can be frozen so you can meal prep and walk right to your freezer and pull one out to nibble on!

Main Ingredients In No-Bake Keto Cookies

Keto coconut cookies are a fantastic alternative to the high carb oatmeal no bake cookies you might have used to eat.

Natural Peanut Butter | When you are on a healthy diet, you know that peanut butter can contain quite a bit of added sugar. So make sure to read the labels and reach for natural peanut butter that meets the keto requirements.

You might even be able to replace it with different nut butter if you are not wanting peanut butter. I haven't tried this so just know the texture of the cookies might alter a bit.

Cocoa Powder | Cocoa powder is going to be the hint of fudgy chocolate in these keto cookies. A little bit goes a long way, and you will love the flavor it gives these cookies.

Unsweetened Coconut Flakes | Make sure to reach for unsweetened coconut flakes. Sweetened flakes will have sugar. I like to use finely shredded coconut as it gives these cookies a really nice texture.

Low Carb Powdered Sugar| Reach for your alternative sweetener confectioner sugar. This is a powdered sugar style of sugar. My favorite is Gentle Sweet, but Swerve also has a great one. Or you can make my own Low Carb Powdered Sugar recipe!

You need it to be super fine or you will taste the grit of the sugar in the cookies. In a pinch you can run plain sweeteners in a food processor to help break it up and offer a similar texture to powdered sugar.

How to Make Keto No Bake Cookies

Start by lining a baking sheet with parchement or wax paper. This is going to be what helps the cookies not stick.

In a bowl you will melt your butter. Once butter is melted add in your peanut butter and whisk it up until it is nice and creamy.

Now you add in your cocoa powder, and sweetener powdered sugar. Once the mixture is fully mixed, fold in your shredded coconut.

Now grab a cookie scoop or spoon and drop out your cookies onto the parchment paper-lined baking sheet.

Then freeze the cookies for about 10 minutes or until they solidify!

How Many Cookies Does This Recipe Make

For this recipe you get 12 cookies. Feel free to double or even triple the recipe if you want to make extras.

Whether you are having a get together or want to meal prep, these cookies are great.

Tips For Freezing No Bake Cookies

Follow the recipe as directed and then make sure to freeze for the 10 minutes to let them set up.

Once the cookies are fully set up, then transfer from the cookie sheet into a freezer bag or airtight container. Freeze for up to three months.

You can thaw on the counter or place them in the fridge for a slow thaw.

Ingredients

  • ¾ Cup Natural Peanut Butter
  • 2 Tablespoons Cocoa Powder
  • 4.5 Tablespoons Gentle Sweet
  • 2 Tablespoons Butter
  • 1 Cup Unsweetened Shredded Coconut

Instructions

  • Line a cookie sheet with parchment paper and set aside.
  • Microwave the butter until fully melted and then stir in the peanut butter until it is a thinner consistency, then mix until smooth.
  • Mix in cocoa and Gentle Sweet until well combined.
  • Mix in the coconut.
  • Using a small cookie scoop, make 12 cookies on your sheet pan.
  • Place them in the freezer for 10 minutes to solidify, then enjoy!

Notes

If you do not have Gentle Sweet, you can use any confectioners type powdered sugar substitute. Or simply use my Low Carb Powdered Sugar as an equal substitute.
If you like things very sweet, you may want to add a touch more Gentle Sweet (5-6 Tablespoons).
These cookies are best stored in the refrigerator or freezer.

    These were so fast and easy to make. similar to another one you have, but of it crunchier because of the coconut flakes. I froze them and had 2 this afternoon after lunch, breaking my fast after my third [of hopefully 8] consecutive 72 hour fasts {Dr. Boz}. ... I was really looking forward to having them, and they did not disappoint. ♥️

    Just made these. I added extra cocoa and Swerve confectioners sugar for a more dark chocolate flavor. So good!!
