I think it's safe to say that peanut butter and chocolate is a winning combination every single time. But when you combine those flavors with other simple ingredients, you've created brownie bites that your taste buds are going to love.
Why waste time waiting for a dessert to cook up in the oven when you can have a no bake treat instead? Crazy simple and delicious, you might not even have to turn on your oven this summer to create desserts!
How do you cut a brownie bite?
This is the great part about this brownie bite recipe. You're actually going to be making them into balls to eat, so there isn't any cutting involved either. Seriously, can this recipe get any better?! It's literally that simple.
Where should you store the leftover no bake bites?
Due to the nature of the ingredients, I recommend storing them in a container with a lid in the fridge. That way they're kept fresh and when you have a hankering for one, you can simply pop off the lid, pop one in your mouth and go about with your day.
Instructions to make these no bake brownie bites
Just remember that you're going to be able to make this recipe without having to turn on the oven. You'll need a mixing bowl to dump all the ingredients into...and that's about it.
You can use a mixer if you want, but this recipe can absolutely be stirred by hand. Need I say again how simple these brownie bites are?!
Once you mix everything together, you just have to place them in the fridge and let them firm up a bit. You don't want these delicious brownie bites falling apart when you're rolling them, right?
Do you have to roll these brownie bites in cocoa powder?
If you want to omit the cocoa powder, do so. Just know that they'll be a little bit more sticky since they don't have that outer coating. The taste, however, will still be amazing.
Can I use crunchy peanut butter instead of smooth?
For sure. Some people prefer creamy because it's more of a textural thing, but if you like that crunch, go for it! As long as you're using natural peanut butter, it doesn't matter the consistency or type.
If you prefer crunchy peanut butter over smooth, go for it. The crunch of the peanuts actually goes quite well in these brownie bites.
If you are going to use the creamy peanut butter, I highly recommend using Adams Natural No-Stir Peanut Butter. It is my absolute favorite brand, and there is no need to stir, as it is very creamy. (This is what I use in my Low Carb Peanut Butter Brownies & Chocolate Peanut Butter Fudge with Collagen!)
Can I use white chocolate chips?
Oh yes! Thanks to the brand new Bake Believe Sugar Free Chocolate Chips, I tried these recently with white chocolate chips, and they were delicious!

No Bake Peanut Butter and Chocolate Brownie Bites
Rich, creamy, and super easy to make, these no bake Peanut Butter Chocolate Brownie Bites are a lovely sugar free, low carb dessert!
Ingredients
Instructions
Add cocoa powder, peanut flour, Gentle Sweet, coconut flour, and unsweetened coconut to a medium mixing bowl.
Mix well.
Add remaining ingredients and mix well with a sturdy spoon (or hand mixer).
If desired, place bowl in fridge for 15-20 minutes to firm up the mixture. This makes rolling it into balls much easier. (Or get your hands a little messy and roll them right away!)
Roll into 1” balls and roll in cocoa powder, if desired. Store in an airtight container in the fridge.

I had to try these, but didn’t have all the ingredients listed so I winged it.
Here is what I did.
2 Tablespoons Cocoa Powder
3/4 cup PB2 powder
3/4 teaspoon liquid stevia
1 Tablespoon Coconut Flour
1 Teaspoon Vanilla Extract
1/2 Cup Water
Mix, makes 11 for 33 cal each. I might dust with sf conf sugar, or not?
