While it's traditionally found in Chinese cuisine, we've taken some liberties with the ingredients to suit anyone's taste.

Plus, it's low-carb and keto-friendly so you can enjoy it without any guilt!

Easy Keto Cashew Chicken Recipe

How to make Keto Cashew Chicken?

This low-carb cashew chicken uses chicken thighs, bell peppers, broccoli, and onions, along with a few other ingredients for an easy chicken stir fry you can make for dinner tonight!

You'll need:

  • Boneless Skinless Chicken Thighs
  • Salt And Pepper
  • 1 Tablespoon Olive Oil (or Avocado Oil)
  • 1 Green Bell Pepper
  • 1 Red Bell Pepper
  • 1 Onion 
  • 2 Cups Frozen Broccoli

For the sauce:

  • Rice Wine Vinegar (regular Rice Vinegar will work, too)
  • Liquid Aminos (can also use Coconut Aminos)
  • Sesame Oil
  • Ground Ginger
  • Minced Garlic
  • Chili Sauce

And of course, cashews and green onions!

This cashew chicken is an easy recipe that can be put together in a matter of minutes!

The recipe below calls for baking this dish in the oven, but you can also stir-fry it on the stovetop--whatever is more convenient for you!

Brown the chicken

You'll brown the chicken pieces on all sides in a pan over medium-high heat.

Prepare the vegetables

Chop all the vegetables you are planning to use in your cashew chicken - broccoli, bell peppers, green onion, etc.

Once the chicken thighs have been browned, add them to the casserole dish with all of the chopped vegetables.

Prepare the sauce

Mix together all of the sauce ingredients and pour over the chicken and vegetable mixture in the casserole dish. Sprinkle with the cashew nuts, cover, and cook!

Traditional chili sauce is filled with sugars, so you'll want to look for a sugar-free chili sauce, or simply make your own low-carb version, like this Keto Sweet Chili Sauce at home!

How do I make the sauce thicker?

If you'd like a thicker sauce, simply add a sprinkle of glucomannan powder or xanthan gum to the sauce when mixing it.

Can I make this as a cashew chicken stir fry?

Oh yes! Just follow the same steps for baking in the oven, but add everything to a large skillet and cook it on the stove!

Ingredients

  • 2 Pounds Boneless Skinless Chicken Thighs
  • Salt And Pepper To Taste
  • 1 Tablespoon Olive Oil

  • 1 Onion Seeded And Cut Into 1-Inch Pieces
  • 2 Cups Frozen Broccoli
  • 2 Teaspoons Rice Wine Vinegar
  • 3 Tablespoons Liquid Aminos
  • 1 1/2 Teaspoons Sesame Oil
  • 1 Teaspoon Ground Ginger
  • 2 Cloves Garlic Minced or 1/2 Teaspoon Garlic Powder
  • 2 Teaspoons Chili Sauce
  • 1/2 Cup Cashews
  • Sliced Green Onions For Garnish

Instructions

  • Preheat the oven to 350 degrees. Prepare a 9x13 casserole dish with nonstick cooking spray.
  • In a large skillet over medium-high heat, add the olive oil. Season the chicken with salt and pepper. Add the chicken to the skillet in batches and brown on all sides.
  • Transfer chicken to the casserole dish.
  • In the casserole dish, toss the chicken together with the bell peppers, broccoli, and onions.
  • In a mason jar or small bowl, mix together the rice wine vinegar, liquid aminos, sesame oil, ground ginger, and chili garlic sauce.
  • Pour the mixture over the chicken and vegetables, then sprinkle with cashews.
  • Cover and cook for 30 minutes. Remove the cover and continue cooking for 15 minutes.
  • Garnish with sliced green onions. Serve over cauliflower rice, if desired.

Notes

You can also make this as a stir-fry by cooking everything in your large skillet on the stovetop!
