Ham egg and cheese casserole without bread
Plus, this breakfast casserole is made without hash browns, so it is also low-carb and keto friendly!

Quick Ham Egg and Cheese Casserole
This breakfast casserole recipe is super easy and fast, too! (And the perfect way to use leftover ham!)
You literally just need to whisk the eggs, then mix all the ingredients together, pour it into a baking dish, and bake until it's set in the middle!
It does need to be baked for about 45 minutes, but the hands-on time is only about 10 minutes (or less)!

It's perfect for a Saturday brunch with family, but it's simple enough that you could pop it in the oven as a breakfast for your kids on a school morning.
My family even enjoys breakfast for dinner, so you could even use it as a handy dinner option!
Variations for an Egg Breakfast Casserole
Add veggies: To make the casserole healthier and add more flavor, you can add diced vegetables like onions, bell peppers, spinach, or broccoli to the mixture.
Simply sauté the veggies in a pan with some oil until they're tender, then mix them in with the ham and cheese before baking.
Use different cheese: While cheddar cheese is a classic choice for a ham and cheese casserole, you can experiment with other types of cheese to give the dish a different flavor.
Try using Swiss, Gouda, or even blue cheese for a bold and tangy taste.
Spice it up: If you like your food with a bit of a kick, you can add some spices to the casserole. Try mixing in some cayenne pepper, chili powder, or paprika to give it a smoky, spicy flavor.
Add herbs: Fresh herbs like parsley, thyme, or rosemary can add a burst of flavor to the casserole. Chop up a handful of herbs and mix them in with the ham and cheese before baking.
Use different meat: While ham is a classic choice for this casserole, you can also experiment with using other types of meat. Try using cooked bacon, shredded chicken, or even ground beef for a different flavor and texture.
Ham and Tomato Casserole: Add some fresh or canned diced tomatoes to your ham and cheese casserole for a burst of bright, tangy flavor.
Ham and Spinach Casserole: Add some nutrient-rich spinach to your ham and cheese casserole for a healthy and flavorful twist. You can also add some chopped sun-dried tomatoes or roasted red peppers for extra color and flavor.
Ham and Artichoke Casserole: Add some chopped artichoke hearts to your ham and cheese casserole for a tangy and flavorful variation. You can also add some grated Parmesan cheese for added richness.
Ham Egg and Cheese Casserole with hash browns
If you aren't watching carbs, you could add hash browns or cubed potatoes (for Trim Healthy Mamas, this would make it a Crossover)
Really, the options are endless!

What should I serve with brunch casserole?
One of the easiest things to serve is fresh fruit!
Yogurt and yogurt parfait cups are also great options.
Sourdough toast is another great side dish that is perfect for brunch (for Trim Healthy Mama's this would be a Crossover).

Could you make this ahead and keep in the fridge or freezer (pre cut after baking). And warm up daily portions for breakfast?? Would it keep ok all week?
Sarah Hardy
Oh yes, it would be great for meal prepping in that way! It should keep well for 5-6 days!

Could you put ingredients together day before and bake next day?
Sarah Hardy
Oh yes, I think that would work fine!
