Have you ever enjoyed a pizza cup? It's like a slice of your favorite pizza, shaped like a muffin, and perfectly portioned. Keto pizza cups make for great make ahead lunches and snacks, too.

The foundation of your pizza muffin is the best low carb pizza crust made from fathead pizza dough. You'll top that with my tastyĀ sugar free pizza sauce and then pile on the cheese and toppings.

Because it's a classic, these keto pizzas are topped with pepperoni, but you can be creative here and really use any low carb pizza topping that catches your fancy.

Tips For Making Low Carb Pizza Crust

If you've never made fathead pizza dough before, you're mind is about to be blown. While a lot of crusts can be made without carbs, there aren't many that are low carbĀ and delicious. But this keto pizza dough is ah-mazing.

Fathead dough is made from mozzarella cheese, cream cheese, almond flour, egg, baking powder, and just a dash of spices.

To start, you'll microwave your cheeses together, stirring as you go until they make a doughy ball.

In a separate bowl, combine well the dry ingredients. Then, add in your egg and cheese dough. Go ahead and use your hands to knead the dough until it's all thoroughly mixed.

If it the dough starts to be hard to knead, then you can simply Ā microwave it quickly and keep mixing. This is your keto pizza base...and it's so good you might just be tempted to make it all by its lonesome.

Due to the nearly carb free nature of these ingredients, you've managed to reduce the carbs in pizza to a wholly acceptable number...even if you're following a stricter keto way of eating!

How To Make Keto Pizza Cups

Now that you have your keto pizza base all made up, you can roll and cut the dough. Then place the squares in a muffin tin and top with your store bought or homemadeĀ sugar free pizza sauce.Ā

Next, add your pepperoni (or sausage or vegetables or ham or bacon) and mozzarella cheese.

You are now ready to bake you low carb pizza bites until the cheese melts and everything is hot and bubbly. You'll know they are all cooked when the edges of the fathead dough turn golden brown. These are best served warm.

For extra flavor, and color sprinkle a little of basil or Italian seasoning on top of the cups after baking.Ā 

How To Serve & Store Low Carb Pizza Cups

You can even make these keto pizza cups ahead of time. Follow the directions above, let them cool, and store them in an airtight container for up to a week in your fridge.

To reheat, simply microwave.

Ingredients

Instructions

    1. Preheat the oven to 370F. Spray muffin tin with oil and leave aside.
    2. Mix the mozzarella cheese and cream cheese in a microwave-safe bowl. Microwave on high for 1 minute.
    3. Stir the mixture and then microwave again on high for 30 seconds.
    4. In a separate bowl add almond flour, seasonings, baking powder, and salt. Mix until combined.
    5. Add the cheese dough and egg to the dry ingredients. Knead with your hand until all the ingredients are well combined.
    6. Place the dough ball on a sheet of parchment paper and place another sheet on top.
    7. Using a rolling pin, roll out the crust to about ¼ inch thickness.
    8. Using a sharp knife cut the dough into a square shape, then cut 6 equal squares of about  4x4 inches each. Place each square into each muffin in of the previously prepared muffin tin. Make a ball with the remaining dough and repeat steps 6 and 7. Cut another 2 squares and place them into the muffin tins.
    9. Add about 2 teaspoon of pizza sauce on top of each dough inside the tins.
    10. Right after that add 2 mini slices of pepperoni and even amounts of mozzarella cheese per tin. 
    11. Bake for 12 minutes or until the edges are golden.
    12. Serve warm.

Notes

To make smaller circles of pepperoni, use any object that is about 1-inch diameter (I use a piping tip), press onto the pepperoni slice, you can reserve the edges for another recipe. (OR, you can purchase mini pepperoni.)

For extra flavor, and color sprinkle a little of basil or Italian seasoning on top of the cups after baking.Ā 

If the dough becomes hard and it is hard to combine all the ingredients, microwave for 20 seconds and continue kneading.Ā
