I reached for Swerve confectioner sugar instead of a classic powdered sugar. (But you can also use Gentle Sweet or my Low Carb Powdered Sugar.)

How To Make Homemade Lemon Curd
Start by grabbing a saucepan and filling it ⅓ with water. You will want to heat the water up on low/medium until it begins to simmer.
Then in a heatproof bowl, you will add in your egg yolks, sweetener, lemon zest, juice, salt, and vanilla. Then whisk for two minutes.
You will then place your bowl onto the saucepan to act similar to a double boiler, where you can whisk for around 8 minutes or until it begins to thicken.
Remove from the heat, and then add in your ice cubes, butter, and mix until melted.
Refrigerate until it is cooled down, and then you can use it as you would like.

- 5 Egg Yolks
- 2 Tablespoons Fresh Lemon Zest
- ½ Cup Lemon Juice
- ½ Cup Swerve Confectioner’s Sugar
- 1 Teaspoon Vanilla Extract
- Pinch of Salt
- 1 Stick Cold Unsalted Butter, cubed
Instructions
- Fill a medium saucepan ⅓ with water, heat over low/medium heat until simmering.

Could you clarify the weight of butter please for the lemon curd. Our blocks of butter are 500 grams. I am guessing 100g.
